Food : Dhuska - How to prepare this street food of Jharkhand

 




Dhuska is a popular deep-fried snack in Jharkhand, often enjoyed during festivals or special occasions. Here's a simple recipe to prepare Dhuska:


**Ingredients:**

- 1 cup rice (soaked for 4-5 hours)

- 1/4 cup chana dal (split Bengal gram, soaked for 4-5 hours)

- 1/4 cup urad dal (split black gram, soaked for 4-5 hours)

- 1 small onion (finely chopped)

- 2-3 green chilies (finely chopped)

- 1 inch ginger (grated)

- Salt to taste

- Oil for frying


**Instructions:**

1. Drain the soaked rice, chana dal, and urad dal. Grind them together into a smooth batter. Add a little water if needed.


2. Transfer the batter to a mixing bowl and add chopped onions, green chilies, grated ginger, and salt. Mix well to form a thick, smooth batter.


3. Heat oil in a deep pan for frying.


4. Take a ladle full of batter and drop it carefully into the hot oil, shaping it into a round disc. You can also use your hands to shape the batter.


5. Fry until both sides are golden brown. Make sure to cook it on medium heat to ensure it's cooked inside as well.


6. Remove the fried Dhuska from the oil and place it on absorbent paper to drain excess oil.


7. Repeat the process for the remaining batter.


Serve Dhuska hot with chutney or a side of your choice. This crispy and flavorful snack is a delightful part of Jharkhand's cuisine.
