 Lagman is a traditional Central Asian dish, particularly popular in Uzbek, Uyghur, and Kyrgyz cuisines. It typically consists of hand-pulled noodles, meat, and vegetables in a flavorful broth. Here's a detailed recipe:


Ingredients:


**For the noodles:**

- 2 cups all-purpose flour

- 1/2 teaspoon salt

- 1/2 cup water (approx.)


**For the broth:**

- 500g lamb or beef, thinly sliced

- 2 tablespoons vegetable oil

- 1 large onion, finely chopped

- 2 large carrots, julienned

- 1 bell pepper, thinly sliced

- 2 tomatoes, chopped

- 3 cloves garlic, minced

- 1 tablespoon tomato paste

- 1 teaspoon ground cumin

- 1 teaspoon ground coriander

- 1 teaspoon paprika

- 1 teaspoon chili flakes (adjust to taste)

- Salt and pepper to taste

- 6 cups beef or vegetable broth


**For garnish:**

- Fresh cilantro or parsley, chopped


Instructions:


**1. Make the Noodles:**

   - In a bowl, mix flour and salt. Gradually add water, kneading until you form a smooth dough.

   - Roll out the dough and cut it into thin strips to make noodles.

   - Boil the noodles in salted water until they are cooked. Drain and set aside.


**2. Prepare the Broth:**

   - In a large pot, heat oil over medium heat. Add sliced meat and brown it on all sides.

   - Add chopped onions and garlic. Cook until onions are translucent.

   - Stir in tomato paste, ground cumin, coriander, paprika, and chili flakes. Cook for a few minutes.

   - Add carrots, bell pepper, and tomatoes. Cook until the vegetables soften.

   - Pour in the broth and bring to a simmer. Let it cook for about 20-30 minutes.


**3. Assemble the Lagman:**

   - Place a portion of cooked noodles in serving bowls.

   - Ladle the hot broth with meat and vegetables over the noodles.


**4. Garnish and Serve:**

   - Garnish with chopped fresh cilantro or parsley.
