Chak-chak is a popular Tatar sweet treat, often enjoyed in various regions of Russia and Central Asia. Here's a detailed recipe for preparing Chak-chak:


Ingredients:


For the Dough:

- 3 cups all-purpose flour

- 3 large eggs

- 1/2 cup sour cream

- 1/4 cup unsalted butter, melted

- 1/2 teaspoon baking soda

- 1/4 teaspoon salt


For the Syrup:

- 1 cup honey

- 1 cup granulated sugar


For Frying:

- Vegetable oil for deep frying


Instructions:


**Prepare the Dough:**


1. In a large bowl, whisk together eggs, sour cream, melted butter, baking soda, and salt.


2. Gradually add the flour to form a soft and elastic dough. Knead until smooth.


3. Cover the dough and let it rest for about 30 minutes.


**Shape and Fry Chak-chak:**


1. Divide the dough into small portions and roll each into a rope about the thickness of your finger.


2. Cut each rope into small pieces, about 1 inch in length.


3. Heat vegetable oil in a deep pan or pot for frying.


4. Fry the dough pieces in batches until they turn golden brown. Use a slotted spoon to remove them and place them on paper towels to absorb excess oil.


**Prepare the Syrup:**


1. In a separate saucepan, combine honey and sugar.


2. Heat over medium heat, stirring until the sugar dissolves. Bring the mixture to a simmer and cook for about 5-7 minutes until it thickens slightly.


3. Remove the syrup from heat.


**Combine and Shape:**


1. Pour the warm syrup over the fried dough pieces. Mix well to ensure all pieces are coated.


2. Quickly shape the coated dough into a mound or a round cake while it's still warm. You can use your hands or shape it in a mold.


3. Let it cool and allow the syrup to set.


4. Once set, cut into pieces and serve.
