Knafeh is a popular Middle Eastern dessert made with thin noodle-like pastry soaked in sweet syrup, typically layered with cheese or semolina. It's known for its delicious combination of crispy textures.
Here's a basic recipe for making Knafeh:
Ingredients:
- 1 pound shredded phyllo dough (kataifi)
- 1 cup unsalted butter, melted
- 1 pound sweet cheese (like mozzarella or akkawi), shredded
- 1 cup semolina
- 1 1/2 cups water
- 1 1/2 cups sugar
- 1 tablespoon lemon juice
- Rose or orange blossom water (optional)
- Chopped pistachios or almonds for garnish
Steps:
1. **Preheat the Oven:**
Preheat your oven to 350°F (175°C).
2. **Prepare the Phyllo Dough:**
- Unravel the shredded phyllo dough and toss it with the melted butter until well coated.
- Press half of the dough into the bottom of a greased baking pan to form a base.
3. **Layer the Cheese:**
- Spread the shredded sweet cheese evenly over the phyllo dough layer.
4. **Top with Phyllo Dough:**
- Add the remaining butter-coated phyllo dough on top of the cheese layer, forming the upper crust.
