 Bajiya, a deep-fried pastry commonly found in Indian cuisine  Here it is how to prepare this item :


 Ingredients:


- 1 cup gram flour (besan)

- 1 medium-sized onion, thinly sliced

- 1-2 green chilies, finely chopped

- 1/2 teaspoon ginger-garlic paste

- 1/2 teaspoon turmeric powder

- 1 teaspoon red chili powder (adjust to taste)

- 1/2 teaspoon cumin seeds

- A pinch of asafoetida (hing)

- Salt to taste

- Water (enough to make a thick batter)

- Oil for deep frying


 Instructions:


1. **Prepare the Batter:**

   - In a mixing bowl, combine gram flour, turmeric powder, red chili powder, cumin seeds, asafoetida, ginger-garlic paste, and salt.

   - Gradually add water while stirring to form a thick, smooth batter.


2. **Add Vegetables:**

   - Add thinly sliced onions and green chilies to the batter. Mix well.


3. **Heat Oil:**

   - Heat oil in a deep frying pan over medium heat.


4. **Fry Bajiya:**

   - Once the oil is hot, drop spoonfuls of the batter into the oil using your fingers or a spoon. Fry until the bajiya turns golden brown and crispy.


5. **Drain Excess Oil:**

   - Use a slotted spoon to remove the fried bajiya from the oil and place them on paper towels to absorb excess oil.


6. **Serve:**

   - Serve hot with mint chutney or tamarind sauce.
