Beshbarmak is a traditional Kazakh dish typically made with boiled meat (usually lamb or beef), served on a bed of pasta or flat noodles. Here's a simple recipe:
Ingredients:
- 1 kg lamb or beef, cut into chunks
- 1 large onion, finely chopped
- 4-5 potatoes, peeled and cut into chunks
- 2 carrots, peeled and sliced
- 1 cup flour
- Salt, to taste
- Black pepper, to taste
- Fresh herbs (such as dill or parsley) for garnish
Instructions:
1. **Prepare the Meat:** In a large pot, place the meat chunks and cover with water. Bring it to a boil and then reduce the heat to simmer. Skim off any foam that rises to the surface. Add salt and pepper to taste. Simmer until the meat is tender, usually 1-2 hours.
2. **Prepare the Vegetables:** In another pot, boil the potatoes and carrots until they are fork-tender.
3. **Make the Noodles:** In a separate pot, bring water to boil. In a bowl, mix flour with a bit of water to form a dough. Roll the dough into a thin sheet and cut it into small squares. Drop these squares into boiling water and cook until they float to the surface.
4. **Assemble the Dish:** Once the meat is cooked, remove it from the broth and place it on a serving platter. Arrange the boiled potatoes and carrots around the meat.
