Ingredients:
- 1 cup whole wheat grains
- 500g chicken or lamb, cut into pieces
- 1 large onion, finely chopped
- 4 cups water
- Salt to taste
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cardamom
- Butter or ghee for serving
Instructions:
1. Rinse the whole wheat grains thoroughly and soak them in water for at least 2-3 hours, or overnight. Drain before using.
2. In a large pot, combine the soaked wheat, chopped onion, and meat pieces.
3. Add water to the pot, bring it to a boil, and then reduce the heat to a simmer.
4. Season with salt, ground cinnamon, and ground cardamom. Stir well.
5. Cover the pot and let it simmer on low heat for several hours (about 3-4 hours), stirring occasionally. You can use a pressure cooker to reduce cooking time if preferred.
6. As the wheat and meat cook, they will break down and create a porridge-like consistency. Continue to cook until the mixture becomes smooth and thick.
7. Adjust salt and spice levels according to your taste.
8. Once done, you can serve Harees hot, topped with a dollop of butter or ghee.
