Shurpa is a hearty Central Asian soup known for its rich broth and assortment of meat and vegetables. Here's a basic recipe for Shurpa:


Ingredients:

- 500g lamb or beef, cut into chunks

- 1 large onion, finely chopped

- 3 carrots, sliced

- 3 potatoes, diced

- 2 tomatoes, chopped

- 1 bell pepper, sliced

- 1 head of garlic, cloves peeled

- 1 bunch cilantro, chopped

- 1 teaspoon ground cumin

- 1 teaspoon paprika

- Salt and pepper to taste

- 2 tablespoons vegetable oil

- Water (enough to cover the ingredients)


Instructions:


1. **Brown the Meat:**

   - In a large pot, heat vegetable oil over medium-high heat.

   - Add the meat chunks and brown them on all sides.


2. **Saute Onions:**

   - Add finely chopped onions to the pot. Saute until they become translucent.


3. **Add Vegetables:**

   - Toss in carrots, potatoes, tomatoes, bell pepper, and peeled garlic cloves.


4. **Season the Soup:**

   - Sprinkle ground cumin, paprika, salt, and pepper over the ingredients. Stir well to distribute the seasonings.


5. **Cover with Water:**

   - Pour enough water into the pot to cover the meat and vegetables.


6. **Simmer:**

   - Bring the soup to a boil, then reduce the heat to low. Let it simmer for at least 1-2 hours until the meat is tender and flavors meld.


7. **Garnish:**

   - Add chopped cilantro to the pot just before serving. Stir to combine.


8. **Serve:**

   - Ladle the Shurpa into bowls, ensuring each serving has a good mix of meat, vegetables, and broth.
