**Dal Puri** is a popular and savory deep-fried bread stuffed with spiced lentils. It's a delightful dish enjoyed in various regions, including Bihar and Jharkhand. Here's a detailed guide on how to prepare Dal Puri:


**Ingredients:**


For the Puri Dough:

1. Whole wheat flour (atta)

2. Salt

3. Water


For the Dal Filling:

1. Chana dal (split chickpeas)

2. Water for soaking

3. Ginger-garlic paste

4. Green chilies, finely chopped

5. Cumin powder

6. Coriander powder

7. Garam masala powder

8. Red chili powder

9. Salt

10. Chopped coriander leaves

11. Oil or ghee for frying


**Procedure:**


**1. Soak the Chana Dal:**

   - Wash the chana dal thoroughly and soak it in water for a few hours or overnight until it softens.


**2. Prepare the Dal Filling:**

   - Drain the soaked chana dal and blend it into a coarse paste using a food processor or blender.

   - In a mixing bowl, combine the dal paste with ginger-garlic paste, chopped green chilies, cumin powder, coriander powder, garam masala powder, red chili powder, salt, and chopped coriander leaves.

   - Mix the ingredients well to form a uniform and well-spiced dal filling.


**3. Make the Puri Dough:**

   - In another bowl, take whole wheat flour and add a pinch of salt.

   - Gradually add water and knead to form a soft and pliable dough.


**4. Assemble the Dal Puri:**

   - Take a small portion of the dough and roll it into a small disc.

   - Place a spoonful of the prepared dal filling in the center of the disc.

   - Bring the edges of the dough together to cover the filling and form a stuffed ball.

   - Gently roll out the stuffed ball into a flat, round puri.


**5. Fry the Dal Puri:**

   - Heat oil or ghee in a deep fryer or a pan.

   - Carefully slide the rolled-out puri into the hot oil.

   - Fry until the puri puffs up and turns golden brown on both sides.

   - Remove the puri from the oil and place it on absorbent paper to drain excess oil.


**6. Serve:**

   - Serve hot Dal Puri with yogurt, pickles, or any chutney of your choice.
