Ingredients:


- 2 cups long-grain rice

- 1 pound lamb or beef, cubed

- 1 large onion, finely chopped

- 3 carrots, julienned

- 1/2 cup vegetable oil

- 4 cups hot water or broth

- 1 teaspoon cumin

- 1 teaspoon paprika

- Salt and pepper to taste

- 3 cloves garlic, minced

- 1/2 cup raisins (optional)

- Fresh herbs for garnish (parsley or cilantro)


Instructions:


1. **Rinse and Soak Rice:**

   - Rinse the rice under cold water until the water runs clear. Soak the rice in water for about 30 minutes, then drain.


2. **Sear the Meat:**

   - In a large, heavy-bottomed pot, heat vegetable oil over medium-high heat.

   - Add the cubed meat and brown on all sides.


3. **Sauté Onions and Carrots:**

   - Add chopped onions to the pot and sauté until translucent.

   - Stir in julienned carrots and continue to cook until the carrots are slightly softened.


4. **Add Spices and Garlic:**

   - Mix in cumin, paprika, minced garlic, salt, and pepper. Stir well to combine.


5. **Add Rice:**

   - Drain the soaked rice and add it to the pot. Stir gently to coat the rice with the spices and vegetables.


6. **Pour Hot Water or Broth:**

   - Pour hot water or broth over the rice and meat mixture. Ensure the liquid covers the rice completely.


7. **Simmer:**

   - Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer until the rice is cooked and the liquid is absorbed (usually 15-20 minutes).

   - If desired, add raisins to the pot during the last few minutes of cooking for a sweet touch.

   - Once cooked, fluff the rice with a fork. Garnish with fresh herbs like parsley or cilantro.
