Cuisine : Maachboos - How to prepare this traditional middle east dish
Maachboos is a traditional Middle Eastern dish, often made with rice and fish. Here's a basic recipe:
Ingredients:
- 2 cups basmati rice
- 500g fish (like kingfish or any firm white fish), cut into pieces
- 1 large onion, finely chopped
- 3 tomatoes, chopped
- 4 cloves garlic, minced
- 1/4 cup vegetable oil
- 1 tablespoon maachboos spice mix (or a mix of cinnamon, cloves, cardamom, and bay leaves)
- 1 teaspoon ground cumin
- Salt to taste
- 4 cups water or fish broth
Instructions:
1. Rinse the rice in cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
2. In a large pot, heat the vegetable oil and sauté the chopped onions until golden brown.
3. Add minced garlic and sauté until fragrant.
4. Add the fish pieces to the pot and cook until they start to brown.
5. Stir in the maachboos spice mix, ground cumin, and salt. Cook for a couple of minutes to let the spices release their flavors.
6. Add chopped tomatoes and cook until they break down and form a thick sauce.
7. Pour in the water or fish broth and bring the mixture to a boil.
8. Add the soaked and drained rice to the pot. Stir well and reduce the heat to low. Cover and simmer until the rice is cooked and the liquid is absorbed.
9. Once done, fluff the rice with a fork and let it rest for a few minutes before serving.
