Plov is a traditional Central Asian dish, often considered the national dish of Uzbekistan. It's a flavorful rice pilaf typically cooked with meat, carrots, and spices. Here's a basic recipe:
Ingredients:
- 2 cups long-grain rice
- 1 lb meat (lamb, beef, or chicken), cubed
- 2 large carrots, julienned
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 1/2 cup vegetable oil
- 1 teaspoon cumin seeds
- 1 teaspoon coriander seeds
- 1 teaspoon ground paprika
- Salt and pepper to taste
- 4 cups hot water or broth
Instructions:
1. Rinse the rice under cold water until the water runs clear. Soak it in water for 30 minutes, then drain.
2. In a large, heavy-bottomed pot, heat oil over medium heat. Add meat and brown it on all sides.
3. Add chopped onions and cook until translucent. Add minced garlic and cook for another minute.
4. Stir in julienned carrots, cumin seeds, coriander seeds, and paprika. Cook for about 5 minutes until carrots are slightly softened.
5. Add drained rice to the pot, stirring to combine with the meat and vegetables.
6. Pour hot water or broth over the mixture. Season with salt and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for about 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
7. Once done, let the plov rest, covered, for 10 minutes before fluffing the rice with a fork.
