Cuisine - Fara - steps to prepare this Indian dish

Fara is a traditional Indian dish, particularly popular in the state of Uttar Pradesh. It's a steamed dumpling made with rice flour and typically stuffed with spiced lentils or seasoned vegetables. Here's a guide on how to prepare Fara:

### Ingredients:

#### For the Outer Layer:

- 1 cup rice flour

- 1/4 cup roasted gram flour (besan)

- Salt to taste

- Water, as needed

#### For the Stuffing:

- 1 cup grated coconut

- 1 teaspoon cumin seeds

- 1 teaspoon mustard seeds

- 1 tablespoon oil

- 2-3 green chilies, finely chopped

- 1/2 cup roasted and crushed peanuts

- Salt to taste

- Chopped coriander leaves for garnish

### Instructions:

#### For the Outer Layer:

1. **Prepare the Dough:**

   - In a mixing bowl, combine rice flour, roasted gram flour, and salt. Gradually add water and knead to form a smooth, pliable dough.

2. **Divide into Balls:**

   - Divide the dough into small lemon-sized balls.

#### For the Stuffing:

3. **Prepare the Stuffing:**

   - Heat oil in a pan. Add cumin seeds and mustard seeds. Once they splutter, add grated coconut and chopped green chilies. Sauté until coconut turns light golden.

4. **Add Peanuts and Seasoning:**

   - Add crushed peanuts, salt, and stir well. Cook for a few minutes until the mixture is well combined. Remove from heat and let it cool.

#### Assembling and Cooking:

5. **Flatten Dough Balls:**

   - Take each dough ball and flatten it into a small disc using your fingers or a rolling pin.

6. **Place the Filling:**

   - Place a spoonful of the prepared coconut and peanut mixture in the center of each disc.

7. **Fold and Seal:**

   - Fold the edges to encase the filling, forming a crescent or half-moon shape. Seal the edges well.

8. **Steam the Fara:**

   - Place the prepared Faras in a steamer and steam for about 15-20 minutes or until the outer layer is cooked and firm.

9. **Serve:**

   - Once cooked, remove the Faras from the steamer. Garnish with chopped coriander leaves.

10. **Serve Warm:**

    - Serve the Faras warm with chutney or a side of yogurt.

Fara is a delightful and nutritious dish, enjoyed as a snack or light meal. The combination of rice flour and coconut stuffing creates a unique and tasty treat.
