Cuisine : Borscht - Steps to make this european soup

 



Borscht is a traditional Eastern European soup, often associated with Ukrainian cuisine. Here's a basic recipe:


Ingredients:

- 2 medium beets, peeled and grated

- 1 large onion, finely chopped

- 2 carrots, peeled and grated

- 3 potatoes, peeled and diced

- 1/2 small cabbage, shredded

- 1 can (14 oz) diced tomatoes

- 4 cups vegetable or beef broth

- 2 cloves garlic, minced

- 2 tablespoons tomato paste

- 2 bay leaves

- Salt and pepper to taste

- Sour cream for serving

- Fresh dill for garnish


Instructions:

1. In a large pot, sauté chopped onions in oil until translucent.

2. Add grated beets and carrots, cook for about 5 minutes.

3. Stir in tomato paste and minced garlic, cook for an additional 2 minutes.

4. Add diced potatoes, shredded cabbage, diced tomatoes (with juice), and bay leaves to the pot.

5. Pour in the broth, bring to a boil, then reduce heat and simmer until vegetables are tender.

6. Season with salt and pepper to taste.

7. Allow the borscht to cool slightly before serving.

8. Serve with a dollop of sour cream and garnish with fresh dill.
