Blini are traditional Russian pancakes, often served with various toppings. Here's a basic recipe for making blini:


**Ingredients:**

- 1 cup all-purpose flour

- 1 cup milk

- 1 egg

- 1 tablespoon melted butter

- 1/2 teaspoon salt

- Additional butter or oil for cooking


**Instructions:**

1. In a mixing bowl, whisk together the flour and salt.

2. In a separate bowl, beat the egg and then add milk and melted butter. Mix well.

3. Gradually add the wet ingredients to the dry ingredients, whisking continuously to avoid lumps.

4. Let the batter rest for about 30 minutes to an hour. This allows the flour to absorb the liquid and results in fluffier blini.

5. Heat a non-stick skillet or griddle over medium heat. Add a small amount of butter or oil to coat the surface.

6. Pour a small amount of batter onto the skillet, swirling it to spread thinly and evenly.

7. Cook until the edges start to lift and the bottom is golden brown, then flip and cook the other side.

8. Repeat with the remaining batter, adding more butter or oil as needed.


**Serve with various toppings:**

- Traditional toppings include sour cream, smoked salmon, caviar, or jam.

- You can also get creative with sweet or savory fillings like cheese, mushrooms, or Nutella.
