Gumbo is a flavorful stew that originated in Louisiana, USA, with strong influences from African, French, and Spanish cuisines. It typically consists of a strongly flavored stock, meat or shellfish, and various vegetables like celery, bell peppers, and onions.


Here's a detailed gumbo recipe:


Ingredients:

- 1/2 cup vegetable oil

- 1/2 cup all-purpose flour

- 1 onion, finely chopped

- 1 bell pepper, chopped

- 2 celery stalks, chopped

- 3 cloves garlic, minced

- 1 can (14 oz) diced tomatoes

- 4 cups chicken or seafood broth

- 1 pound Andouille sausage, sliced

- 1 pound chicken (boneless, skinless thighs), diced

- 1 pound shrimp, peeled and deveined

- 1 cup okra, sliced (optional)

- 2 bay leaves

- 1 teaspoon thyme

- 1 teaspoon oregano

- Salt and pepper to taste

- Cooked rice for serving


Instructions:

1. In a heavy pot, make a roux by whisking together oil and flour over medium heat until it turns a dark brown color.

2. Add onions, bell peppers, and celery (the holy trinity) to the roux and cook until vegetables are softened.

3. Stir in garlic, diced tomatoes, and broth. Bring to a simmer.

4. Add Andouille sausage, chicken, shrimp, okra, bay leaves, thyme, oregano, salt, and pepper. Simmer for at least an hour, stirring occasionally.

5. Adjust seasoning to taste. Remove bay leaves before serving.

6. Serve the gumbo over cooked rice.
