**Sattu Paratha** is a nutritious and flavorful dish, popular in regions like Bihar, Jharkhand, and parts of Northern India. It involves stuffing unleavened wheat flour dough with a spiced mixture of roasted gram flour (sattu). Here's a step-by-step guide on how to prepare Sattu Paratha:


**Ingredients:**


For the Dough:

1. Whole wheat flour (atta)

2. Water

3. Salt


For the Sattu Filling:

1. Sattu (roasted gram flour)

2. Chopped onions

3. Chopped green chilies

4. Chopped coriander leaves

5. Ajwain (carom seeds)

6. Salt

7. Ghee (clarified butter)


**Procedure:**


**1. Prepare the Dough:**

   - In a bowl, take whole wheat flour and add a pinch of salt.

   - Gradually add water and knead to form a soft and pliable dough.

   - Cover the dough and let it rest for about 15-20 minutes.


**2. Prepare the Sattu Filling:**

   - In a mixing bowl, combine sattu with chopped onions, green chilies, coriander leaves, ajwain, salt, and a tablespoon of ghee.

   - Mix the ingredients thoroughly, ensuring an even distribution of spices.


**3. Assemble the Parathas:**

   - Take a small portion of the dough and roll it into a ball.

   - Roll out the ball into a small disc, place a portion of the sattu filling in the center.

   - Bring the edges of the dough together to cover the filling and form a stuffed ball.


**4. Roll out the Parathas:**

   - Gently roll out the stuffed ball into a flat, round paratha using a rolling pin. Ensure an even thickness.


**5. Cook the Parathas:**

   - Heat a griddle (tawa) over medium heat.

   - Place the rolled paratha on the hot griddle.

   - Cook each side, applying ghee, until golden brown spots appear.


**6. Serve:**

   - Serve the hot and crispy Sattu Parathas with yogurt, pickles, or any condiment of your choice.
