Dessert : Pavlova - how to prepare this New Zealand delicacy

 



Pavlova is a popular and iconic dessert in both New Zealand and Australia. It's a meringue-based dessert named after the Russian ballerina Anna Pavlova. Here's a basic overview of how pavlova is typically prepared:


**Ingredients:**

- 4 large egg whites

- 1 cup granulated sugar

- 1 teaspoon white vinegar

- 1 teaspoon vanilla extract

- 1 teaspoon cornstarch

- Whipped cream

- Fresh fruits (such as kiwi, berries, or passion fruit) for topping


**Instructions:**


1. **Preheat Oven:**

   - Preheat your oven to around 150°C (300°F). Ensure the oven rack is in the center position.


2. **Prepare Baking Sheet:**

   - Line a baking sheet with parchment paper. You can trace a circle (around 8-10 inches in diameter) on the paper to guide the shape of your pavlova.


3. **Whip Egg Whites:**

   - In a clean, dry bowl, beat the egg whites until stiff peaks form. Gradually add the sugar, one tablespoon at a time, while continuing to beat until the mixture is glossy and the sugar is fully dissolved.


4. **Add Flavorings:**

   - Gently fold in the vinegar, vanilla extract, and cornstarch until well combined. Be careful not to deflate the egg whites.


5. **Shape Pavlova:**

   - Spoon the meringue mixture onto the prepared baking sheet, staying within the traced circle. Use a spatula to create a well in the center, forming a nest-like shape.


6. **Bake:**

   - Place the baking sheet in the preheated oven and immediately reduce the temperature to around 120°C (250°F). Bake for about 1 to 1.5 hours or until the pavlova is crisp on the outside and marshmallow-like on the inside.


7. **Cool:**

   - Allow the pavlova to cool completely on the baking sheet. Once cooled, carefully transfer it to a serving plate.


8. **Top with Whipped Cream and Fruits:**

   - Just before serving, spread whipped cream over the pavlova and top it with an assortment of fresh fruits.


Pavlova is known for its delicate, crispy exterior and soft, marshmallow-like interior. The combination of the sweet meringue, creamy whipped cream, and tart fruits creates a delightful and visually appealing dessert.
