Eromba is a traditional Manipuri dish known for its unique flavor, made with fermented fish, vegetables, and bamboo shoot. Here's a basic recipe for preparing Eromba:


**Ingredients:**

- 250 grams fermented fish (Ngari)

- 1 cup bamboo shoot, thinly sliced

- 1 cup pumpkin or any other seasonal vegetable, diced

- 2 medium-sized potatoes, diced

- 2-3 green chillies, chopped

- 2 tablespoons mustard oil

- Salt to taste


**Instructions:**


1. **Preparation of Fermented Fish (Ngari):**

   - Rinse the fermented fish (Ngari) thoroughly in water.

   - Crush or mash the fermented fish into a paste-like consistency. Set it aside.


2. **Vegetable Preparation:**

   - In a cooking pot, combine the sliced bamboo shoot, diced pumpkin, and potatoes.

   - Add water just enough to cover the vegetables.

   - Cook the vegetables until they are tender.


3. **Making the Eromba:**

   - Once the vegetables are cooked, add the mashed fermented fish (Ngari) to the pot.

   - Mix the ingredients well and let them simmer for a few minutes, allowing the flavors to blend.

   - Add chopped green chillies for spice. Adjust the quantity based on your preference for heat.

   - Pour mustard oil into the mixture. Mustard oil adds a distinct flavor to Eromba.

   - Stir the mixture thoroughly, ensuring that the fermented fish is well distributed.


4. **Seasoning:**

   - Add salt to taste and continue to cook for a few more minutes, allowing the flavors to meld.


5. **Serving:**

   - Once the Eromba is cooked to your liking, remove it from heat.

   - Serve it hot with steamed rice.
