**Ingredients:**

- 1 cup mixed seasonal vegetables (spinach, mustard greens, radish, turnip, etc.), finely chopped

- 1/2 cup rice

- 2-3 green chillies, chopped

- 1 small piece of ginger, grated

- 1 tablespoon mustard oil

- 1 teaspoon cumin seeds

- 1/2 teaspoon turmeric powder

- Salt to taste

- Water


**Instructions:**


1. **Rinse the Rice:**

   - Rinse the rice under cold water until the water runs clear.


2. **Vegetable Preparation:**

   - In a pot, combine the mixed seasonal vegetables, chopped onion, green chillies, and grated ginger.

   - Add water to cover the vegetables and bring it to a boil.


3. **Adding Rice:**

   - Once the vegetables start to cook, add the rinsed rice to the pot.

   - Allow the rice and vegetables to cook together until they are soft and well-cooked.


4. **Preparing the Tempering:**

   - In a separate pan, heat mustard oil.

   - Add cumin seeds to the hot oil and let them splutter.

   - Add turmeric powder to the tempering and quickly stir.


5. **Combining the Elements:**

   - Pour the tempering mixture into the pot of cooked vegetables and rice.

   - Mix well, ensuring the flavors blend together.


6. **Seasoning:**

   - Add salt to taste and adjust the seasoning according to your preference.


7. **Serving:**

   - Once everything is cooked and seasoned, Kangsoi is ready to be served.

   - Serve it hot as a comforting and hearty soup.
