Here's a basic recipe for preparing jambalaya:


Ingredients:

- 1 pound boneless, skinless chicken thighs, diced

- 1/2 pound Andouille sausage, sliced

- 1 large onion, chopped

- 1 bell pepper, chopped

- 2 celery stalks, chopped

- 3 cloves garlic, minced

- 1 can (14 oz) diced tomatoes

- 2 cups long-grain white rice

- 4 cups chicken broth

- 1 teaspoon thyme

- 1 teaspoon oregano

- 1 teaspoon paprika

- 1/2 teaspoon cayenne pepper (adjust to taste)

- Salt and pepper to taste

- Green onions and parsley for garnish


Instructions:

1. In a large, heavy pot or Dutch oven, brown the chicken and sausage over medium-high heat. Remove excess fat if needed.

2. Add onions, bell peppers, celery, and garlic. Sauté until vegetables are softened.

3. Stir in diced tomatoes, rice, chicken broth, thyme, oregano, paprika, cayenne pepper, salt, and pepper.

4. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 20-25 minutes or until the rice is cooked and the liquid is absorbed.

5. Optional: During the last 10 minutes, add shrimp and cook until they turn pink.

6. Adjust seasoning if necessary and let the jambalaya rest for a few minutes before serving.

7. Garnish with chopped green onions and parsley.
