Sweet potato pudding : How to make this Carribean pudding

 



Sweet potato pudding is a delicious and comforting Caribbean dessert made with grated sweet potatoes, spices, and coconut milk. It's a popular treat in countries like Jamaica and Trinidad and Tobago. Here's a simple recipe for making sweet potato pudding:

Ingredients:

  • 3 cups of grated sweet potatoes (about 3 medium-sized sweet potatoes)
  • 1 cup of grated coconut (fresh or desiccated coconut)
  • 1 cup of brown sugar
  • 1/2 cup of all-purpose flour
  • 1/2 cup of cornmeal
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of ground cinnamon
  • 1/2 teaspoon of grated nutmeg
  • 1/2 teaspoon of salt
  • 1/2 cup of melted butter or margarine
  • 1 can (about 14 ounces) of coconut milk
  • 1/2 cup of raisins (optional)
  • 1/4 cup of rum or wine (optional, for added flavor)

Instructions:

  1. Prepare the Sweet Potatoes: Wash, peel, and grate the sweet potatoes using a box grater or a food processor with the grating attachment. You should have about 3 cups of grated sweet potatoes. Place the grated sweet potatoes in a large mixing bowl.

  2. Prepare the Grated Coconut: If using fresh coconut, grate it finely. If using desiccated coconut, soak it in hot water for a few minutes to rehydrate it. Squeeze out any excess water before adding it to the sweet potatoes.

  3. Combine Dry Ingredients: In the same mixing bowl with the grated sweet potatoes, add the grated coconut, brown sugar, all-purpose flour, cornmeal, ground cinnamon, grated nutmeg, and salt. Mix these dry ingredients together until they are well combined.

  4. Add Wet Ingredients: Pour in the melted butter or margarine, vanilla extract, and the can of coconut milk. Mix everything thoroughly to form a thick batter. If you're using rum or wine, you can add it at this stage for extra flavor.

  5. Fold in Raisins (Optional): If you like raisins in your sweet potato pudding, fold in 1/2 cup of raisins at this point.

  6. Prepare the Baking Dish: Preheat your oven to 350°F (175°C). Grease a baking dish (8x8 inches or a similar size) or line it with parchment paper.

  7. Bake: Pour the sweet potato mixture into the prepared baking dish and smooth it out evenly. Place the dish in the preheated oven and bake for about 45-60 minutes or until the pudding is set and the top is golden brown. You can insert a toothpick into the center; if it comes out clean, the pudding is done.

  8. Cool and Serve: Allow the sweet potato pudding to cool for a while before slicing it into squares or rectangles. It's traditionally served at room temperature or slightly warm.
