Bahamian souse : how to make this dish & enjoy

 




Bahamian souse is a traditional dish from the Bahamas known for its tangy and spicy flavors. Here's a recipe for making Bahamian souse:


Ingredients:


- 2 pounds of pig's feet (cleaned and chopped)

- 2 onions, thinly sliced

- 2-3 carrots, thinly sliced

- 2-3 celery stalks, thinly sliced

- 2 cloves of garlic, minced

- 2 bay leaves

- 1 Scotch bonnet pepper, finely chopped (adjust to your spice preference)

- Juice of 2-3 limes

- 1/4 cup white vinegar

- 2 tablespoons salt

- 1 teaspoon black pepper

- 1 teaspoon allspice

- 1/2 teaspoon thyme

- Water


Instructions:


1. In a large pot, add the pig's feet, bay leaves, and enough water to cover the meat. Bring it to a boil, then reduce the heat and simmer for about 1-2 hours until the pig's feet are tender. Skim off any foam that forms on the surface while simmering.


2. Remove the pig's feet from the pot, discard the water, and let the meat cool.


3. Once the pig's feet have cooled, remove any excess fat, bones, and cartilage, then cut the meat into small pieces or strips.


4. In a large mixing bowl, combine the pig's feet, sliced onions, carrots, celery, minced garlic, and chopped Scotch bonnet pepper.


5. In a separate bowl, mix together the salt, black pepper, allspice, and thyme. Sprinkle this seasoning mix over the pig's feet and vegetables.


6. Add the juice of the limes and white vinegar to the bowl. This gives the souse its tangy flavor.


7. Mix everything together thoroughly. If you like it spicier, you can add more Scotch bonnet pepper at this stage.


8. Cover the bowl and refrigerate the souse for several hours or overnight to allow the flavors to meld.


9. Serve your Bahamian souse cold. It's a flavorful and zesty dish that's often enjoyed as a snack or appetizer.
