Cranachan : How to prepare this tasty Scottish delicacy

 


Cranachan is a traditional Scottish dessert made with layers of whipped cream, toasted oats, honey, and fresh raspberries. It's a delicious and simple dessert that's often enjoyed in Scotland, especially during the summer months.


Here's a simple recipe for preparing Cranachan:


Ingredients:


- 250g fresh raspberries (you can also use other berries like strawberries)

- 300ml double cream (heavy cream)

- 3 tablespoons of honey

- 75g toasted oats

- 2 tablespoons of whisky (optional)

- Mint leaves for garnish (optional)


Instructions:


1. Toast the Oats:

   - In a dry frying pan, toast the oats over medium heat until they turn golden brown. This should take about 5-7 minutes. Stir constantly to prevent burning. Once toasted, set them aside to cool.


2. Prepare the Raspberries:

   - Rinse and dry the fresh raspberries. You can also save a few for garnishing if you like.


3. Whip the Cream:

   - In a mixing bowl, whip the double cream until it forms stiff peaks. Be careful not to overwhip it; you want it to be thick and creamy.


4. Add Honey and Whisky:

   - Gently fold in the honey and whisky (if using) into the whipped cream. This will sweeten and flavor the cream.


5. Assemble the Cranachan:

   - In serving glasses or bowls, start by adding a layer of whipped cream mixture at the bottom.

   - Next, sprinkle some toasted oats on top of the cream.

   - Add a layer of fresh raspberries.

   - Repeat the layers until the glass is filled, finishing with a dollop of cream on top.


6. Garnish:

   - If desired, garnish each serving with a few fresh raspberries and a sprig of mint for a pop of color.


7. Serve:

   - Cranachan can be served immediately, or you can refrigerate it for a short time to chill before serving.
