Cornish pastry : How to prepare this tasty english dish

 





A Cornish pasty is a traditional British pastry filled with meat and vegetables, typically beef, potatoes, swede (rutabaga), and onions, seasoned with salt and pepper. Here's a basic recipe for making Cornish pasties:


Ingredients:

- 2 1/2 cups all-purpose flour

- 1/2 cup unsalted butter, cold and cubed

- 1/2 cup lard or vegetable shortening, cold and cubed

- A pinch of salt

- Cold water (about 1/2 cup)


For the filling:

- 1 pound of beef, diced into small cubes

- 1 large potato, diced

- 1 small swede (rutabaga), diced

- 1 onion, finely chopped

- Salt and pepper to taste


Instructions:


1. Start by making the pastry:

   - In a mixing bowl, combine the flour and a pinch of salt.

   - Add the cold, cubed butter and lard/shortening to the flour mixture.

   - Use your fingers or a pastry cutter to rub the fat into the flour until the mixture resembles breadcrumbs.

   - Gradually add cold water, a little at a time, and mix until the dough comes together. You want a firm but pliable dough.

   - Divide the dough into four equal portions, shape them into discs, wrap them in plastic wrap, and refrigerate for at least 30 minutes.


2. Prepare the filling:

   - In a bowl, combine the diced beef, potato, swede, and chopped onion.

   - Season the mixture with salt and pepper to taste.


3. Assemble the pasties:

   - Preheat your oven to 375°F (190°C).

   - On a floured surface, roll out one of the pastry discs into a circle about 8-9 inches in diameter.

   - Place a portion of the filling mixture onto one half of the pastry circle.

   - Fold the other half of the pastry over the filling, creating a semi-circle.

   - Crimp the edges of the pastry to seal the pasty. You can use a fork to press down and create a pattern along the edge.

   - Repeat this process with the remaining pastry discs and filling.


4. Bake:

   - Place the assembled pasties on a baking sheet lined with parchment paper.

   - Optionally, you can brush the pasties with beaten egg for a golden finish.

   - Bake in the preheated oven for about 45-55 minutes or until the pasties are golden brown and the filling is cooked through.


5. Allow the pasties to cool slightly before serving. They can be enjoyed warm or at room temperature.
