Shortbread- how to make this classic Scottish cookie

 



Shortbread is a classic Scottish biscuit (cookie) known for its crumbly texture and buttery flavor. Here's a basic recipe to prepare traditional shortbread:


Ingredients:


- 1 cup (2 sticks) unsalted butter, at room temperature

- 1/2 cup granulated sugar

- 2 cups all-purpose flour

- 1/4 teaspoon salt (optional)

- Additional sugar for sprinkling (optional)


Instructions:


1. Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper.


2. Cream the Butter and Sugar:

   - In a mixing bowl, beat the room-temperature butter and granulated sugar together until creamy and well combined. You can use a hand mixer or do this by hand with a wooden spoon.


3. Add Flour and Salt:

   - Gradually add the all-purpose flour and salt (if using) to the butter-sugar mixture. Mix until the dough comes together. Be careful not to overmix; you want the dough to just hold together.


4. Shape the Dough:

   - Turn the dough out onto a lightly floured surface and gently knead it until it's smooth. Form the dough into a round disc about 1/2 inch (1.3 cm) thick.


5. Cut into Shapes:

   - You can shape the shortbread in various ways. One common method is to use a cookie cutter to create rounds or other shapes. Alternatively, you can simply cut it into squares or rectangles.


6. Prick with a Fork (Optional):

   - Using a fork, prick the top of each shortbread piece. This helps prevent the shortbread from puffing up too much during baking.


7. Arrange on Baking Sheet:

   - Place the shaped shortbread pieces on the prepared baking sheet, leaving a bit of space between them.


8. Bake:

   - Bake in the preheated oven for about 20-25 minutes or until the edges are lightly golden. The shortbread should still be pale on top.


9. Optional Sugar Sprinkle:

   - If desired, sprinkle a little granulated sugar over the top of the shortbread while it's still warm.


10. Cool:

    - Allow the shortbread to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.


Once cooled, your homemade shortbread is ready to enjoy! These buttery delights are perfect with a cup of tea or coffee. Store them in an airtight container to keep them fresh.
