- 4 cloves garlic

- 2 tablespoons fresh thyme leaves (or 2 teaspoons dried thyme)

- 2 teaspoons ground allspice (pimento)

- 2 teaspoons ground cinnamon

- 2 teaspoons ground nutmeg

- 2 teaspoons brown sugar

- 2 teaspoons salt

- 2 teaspoons black pepper

- 1/4 cup soy sauce

- 1/4 cup olive oil

- 1/4 cup vinegar (white or apple cider vinegar)


**For the Chicken or Pork:**

- 4 pounds (1.8 kg) chicken pieces (wings, thighs, or drumsticks) or pork cuts (e.g., shoulder or chops)


**Instructions:**


**1. Prepare the Jerk Seasoning:**

   - In a blender or food processor, combine all the jerk seasoning ingredients. Blend until you have a smooth paste. Adjust the number of Scotch bonnet peppers based on your desired level of spiciness.


**2. Marinate the Meat:**

   - Place your chicken or pork pieces in a large bowl or a resealable plastic bag.

   - Rub the jerk seasoning paste all over the meat, ensuring it's well coated.

   - Cover and refrigerate for at least 4 hours or overnight for the best flavor.


**3. Grill or Cook:**

   - Preheat your grill to medium-high heat (about 350-400°F or 175-200°C). Alternatively, you can use a smoker or oven.

   - If grilling, oil the grates to prevent sticking.

   - Grill the chicken or pork for about 25-30 minutes, turning occasionally, until it's fully cooked. The internal temperature should reach 165°F (74°C) for chicken or 145°F (63°C) for pork.


**4. Serve:**

   - Once cooked, let the meat rest for a few minutes.

   - Serve the jerk chicken or jerk pork with traditional sides like rice and peas, fried plantains, and coleslaw.
