Wonton soup is a comforting and flavorful Chinese dish featuring delicate wontons in a savory broth. Here’s how to prepare it:


### Ingredients


#### For the Wontons:

- 1/2 lb (225g) ground pork

- 1/4 lb (115g) shrimp, peeled, deveined, and chopped

- 2 green onions, finely chopped

- 1 tablespoon soy sauce

- 1 tablespoon Shaoxing wine (or dry sherry)

- 1 teaspoon sesame oil

- 1 teaspoon grated ginger

- 1/2 teaspoon sugar

- 1/2 teaspoon salt

- 1/4 teaspoon white pepper

- 1 pack of wonton wrappers (available in Asian markets)


#### For the Broth:

- 6 cups chicken stock

- 1-inch piece ginger, sliced

- 2 cloves garlic, smashed

- 2-3 green onions, cut into 2-inch pieces

- 2 tablespoons soy sauce

- 1 tablespoon Shaoxing wine (or dry sherry)

- Salt to taste

- White pepper to taste

- A few drops of sesame oil


#### Optional Garnishes:

- Chopped green onions

- Fresh cilantro

- Baby bok choy or spinach

- A few drops of chili oil


### Instructions


1. **Prepare the Wonton Filling:**

   - In a large bowl, combine the ground pork, chopped shrimp, green onions, soy sauce, Shaoxing wine, sesame oil, grated ginger, sugar, salt, and white pepper. Mix well until all ingredients are thoroughly combined.


2. **Wrap the Wontons:**

   - Place a wonton wrapper on a clean surface. Add about 1 teaspoon of filling to the center of the wrapper.

   - Moisten the edges of the wrapper with a little water.

   - Fold the wrapper in half to form a triangle, pressing out any air and sealing the edges tightly.

   - Bring the two opposite corners of the triangle together and press to seal, forming the traditional wonton shape. Repeat with the remaining filling and wrappers.


3. **Prepare the Broth:**

   - In a large pot, bring the chicken stock to a boil.

   - Add the sliced ginger, smashed garlic, and green onions. Reduce the heat and let it simmer for 10-15 minutes to infuse the flavors.

   - Remove the ginger, garlic, and green onions from the broth. Season with soy sauce, Shaoxing wine, salt, white pepper, and a few drops of sesame oil.


4. **Cook the Wontons:**

   - Bring a separate pot of water to a boil. Add the wontons in batches, making sure not to overcrowd the pot.

   - Boil the wontons for about 4-5 minutes until they float to the surface and the filling is cooked through.

   - Remove the wontons with a slotted spoon and transfer them to the prepared broth.


5. **Serve:**

   - Divide the wontons among serving bowls.

   - Ladle the hot broth over the wontons.

   - Garnish with chopped green onions, fresh cilantro, baby bok choy or spinach, and a few drops of chili oil if desired.


### Tips:

- Ensure the wonton edges are sealed tightly to prevent them from opening during cooking.

- You can freeze uncooked wontons for later use. Arrange them in a single layer on a baking sheet, freeze until solid, and then transfer to a freezer bag.

- For a more robust flavor, you can add a few slices of shiitake mushrooms or a drizzle of soy sauce to the broth before serving.
