 Crispy Chilli Baby Corn Recipe


 Ingredients:


##### For the Baby Corn:

- 250 grams baby corn, cut into halves

- 1/2 cup all-purpose flour

- 1/4 cup cornstarch

- 1/4 teaspoon baking powder

- Salt and pepper, to taste

- Water, as needed

- Oil, for deep frying


##### For the Sauce:

- 2 tablespoons vegetable oil

- 1 tablespoon finely chopped garlic

- 1 tablespoon finely chopped ginger

- 1 medium onion, cut into chunks

- 1/2 green bell pepper, cut into chunks

- 1/2 red bell pepper, cut into chunks

- 2-3 green chilies, slit

- 1 tablespoon soy sauce

- 2 tablespoons tomato ketchup

- 1 tablespoon red chili sauce

- 1 teaspoon vinegar

- 1 teaspoon sugar

- Salt, to taste

- 1 teaspoon cornstarch mixed with 2 tablespoons water (slurry)

- Spring onions, chopped (for garnish)


 Instructions:


##### Prepare the Baby Corn:

1. **Blanch the Baby Corn:** Boil water in a pot, add a pinch of salt, and blanch the baby corn for 2-3 minutes. Drain and set aside.

2. **Make the Batter:** In a bowl, mix the all-purpose flour, cornstarch, baking powder, salt, and pepper. Gradually add water to make a smooth, thick batter.

3. **Coat the Baby Corn:** Dip each piece of baby corn into the batter, ensuring they are well coated.

4. **Fry the Baby Corn:** Heat oil in a deep pan or fryer. Once the oil is hot (around 350°F/175°C), fry the baby corn in batches until golden and crispy, about 4-5 minutes per batch. Drain on paper towels.


##### Make the Sauce:

5. **Heat the Oil:** In a large pan or wok, heat 2 tablespoons of vegetable oil over medium-high heat.

6. **Stir-Fry Aromatics:** Add the chopped garlic and ginger, and stir-fry for about 30 seconds until fragrant.

7. **Add Vegetables:** Add the onion, green bell pepper, red bell pepper, and green chilies. Stir-fry for 2-3 minutes until the vegetables are tender-crisp.

8. **Add Sauces:** Add the soy sauce, tomato ketchup, red chili sauce, vinegar, and sugar. Stir well to combine.

9. **Thicken the Sauce:** Add the cornstarch slurry to the pan and cook for another 1-2 minutes until the sauce thickens. Adjust seasoning with salt as needed.


##### Combine and Serve:

10. **Add Baby Corn:** Add the fried baby corn to the pan and toss to coat them well with the sauce.

11. **Heat Through:** Cook for another 1-2 minutes until everything is well combined and heated through.

12. **Garnish and Serve:** Garnish with chopped spring onions and serve hot as an appetizer or a side dish.


#### Tips:

- **Crispier Baby Corn:** Ensure the oil is hot enough before frying to get a crispy texture. You can double-fry the baby corn for extra crispiness.

- **Adjusting Spice Level:** Adjust the number of green chilies and the amount of red chili sauce to control the spiciness of the dish.
