 Sweet and Sour Chicken Recipe


Ingredients:


##### For the Chicken:

- 1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

- 1 cup all-purpose flour

- 1 cup cornstarch

- 2 large eggs

- Salt and pepper, to taste

- Vegetable oil, for frying


##### For the Sweet and Sour Sauce:

- 1/2 cup pineapple juice

- 1/4 cup rice vinegar (or white vinegar)

- 1/4 cup ketchup

- 1/4 cup soy sauce

- 1/2 cup brown sugar

- 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)


##### For the Stir-Fry:

- 1 red bell pepper, cut into chunks

- 1 green bell pepper, cut into chunks

- 1 yellow bell pepper, cut into chunks

- 1 medium onion, cut into chunks

- 1 cup pineapple chunks (canned or fresh)

- 2 cloves garlic, minced


 Instructions:


##### Prepare the Chicken:

1. **Marinate the Chicken:** Season the chicken pieces with salt and pepper.

2. **Batter the Chicken:** In one bowl, mix the flour and cornstarch. In another bowl, beat the eggs. Dip each chicken piece first into the eggs, then coat with the flour-cornstarch mixture, shaking off any excess.

3. **Fry the Chicken:** Heat vegetable oil in a deep fryer or large pan to 350°F (175°C). Fry the chicken in batches until golden brown and cooked through, about 5-6 minutes per batch. Remove and drain on paper towels.


##### Make the Sweet and Sour Sauce:

4. **Combine Ingredients:** In a medium saucepan, combine the pineapple juice, rice vinegar, ketchup, soy sauce, and brown sugar. Stir well to combine.

5. **Cook the Sauce:** Bring the mixture to a boil over medium heat. Reduce the heat and simmer for 2-3 minutes.

6. **Thicken the Sauce:** Stir the cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons water) into the sauce. Cook for another 2-3 minutes, until the sauce thickens. Remove from heat and set aside.


##### Stir-Fry the Vegetables:

7. **Stir-Fry:** In a large pan or wok, heat a little oil over medium-high heat. Add the minced garlic and stir-fry for about 30 seconds until fragrant.

8. **Add Vegetables:** Add the bell peppers, onion, and pineapple chunks. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.


##### Combine and Serve:

9. **Mix Everything:** Add the fried chicken pieces to the stir-fried vegetables. Pour the sweet and sour sauce over everything and toss to coat evenly.

10. **Heat Through:** Cook for another 1-2 minutes until everything is heated through and well combined.

11. **Serve:** Serve hot over steamed rice or as desired.


#### Tips:

- **Adjusting the Sauce:** You can adjust the sweetness or sourness of the sauce by adding more sugar or vinegar, respectively.

- **Crispier Chicken:** For extra crispy chicken, double-fry the pieces by frying them a second time for 1-2 minutes after the initial frying.
