Moros Y Cristianos : How to prepare this classic Cuban dish

 



Moros y Cristianos is a classic Cuban dish made with black beans and white rice cooked together, creating a delicious and contrasting combination. Here's a simple recipe to prepare Moros y Cristianos:


Ingredients:


For the Black Beans:

- 1 cup dried black beans

- 4 cups water

- 1 small green bell pepper, finely chopped

- 1 small onion, finely chopped

- 3 cloves garlic, minced

- 1 bay leaf

- 1 teaspoon ground cumin

- Salt and pepper to taste


For the White Rice:

- 1 cup long-grain white rice

- 2 cups water

- 2 tablespoons olive oil

- Salt to taste


Instructions:


1. Start by preparing the black beans:

   - Rinse the dried black beans and soak them overnight in water. Alternatively, you can use canned black beans, which don't require soaking.

   - In a large pot, combine the soaked (or canned) black beans, water, green bell pepper, onion, garlic, bay leaf, and ground cumin.

   - Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 1 to 1.5 hours (or follow the instructions on the canned beans) until the beans are tender and the liquid has thickened. Stir occasionally.

   - Season with salt and pepper to taste. Remove the bay leaf and set the black beans aside.


2. Prepare the white rice:

   - Rinse the white rice in a fine-mesh strainer until the water runs clear.

   - In a separate pot, bring 2 cups of water to a boil.

   - Add the rinsed rice, olive oil, and salt to the boiling water. Stir well.

   - Reduce the heat to low, cover the pot with a tight-fitting lid, and simmer for 18-20 minutes, or until the rice is tender and the water is absorbed.

   - Fluff the cooked rice with a fork.


3. Combine the black beans and white rice:

   - To serve, place a portion of white rice on a plate or in a bowl.

   - Top the rice with a generous portion of black beans and their sauce.


Moros y Cristianos is often served as a side dish or accompanied by other Cuban dishes like Ropa Vieja or Vaca Frita. Enjoy the delicious contrast of flavors and textures in this traditional Cuban dish!
