Cuisine : Kachchi Dabeli - How to prepare this Gujarat street dish
Kachchi Dabeli is a popular Indian Gujarati street food. Here's a basic recipe to prepare it:
Ingredients:
- 4 small burger buns or pav
- 4 boiled and mashed potatoes
- 1/2 cup roasted peanuts, crushed
- 1/4 cup pomegranate seeds
- 2 tablespoons dabeli masala
- 2 tablespoons tamarind chutney
- 2 tablespoons green chutney
- 2 tablespoons oil
- A pinch of asafoetida (hing)
- A pinch of turmeric powder
- Salt to taste
- 1/2 cup nylon sev (crunchy fried noodles)
Instructions:
1. Heat oil in a pan and add a pinch of asafoetida.
2. Add the mashed potatoes, turmeric powder, dabeli masala, and salt. Mix well and sauté for a few minutes.
3. Slice the buns horizontally and lightly toast them on a griddle with some butter.
4. Spread green chutney on one side of the bun and tamarind chutney on the other.
5. Place the potato mixture on one side of the bun.
6. Sprinkle crushed peanuts and pomegranate seeds on top.
7. Add a generous amount of nylon sev for crunch.
8. Close the bun with the other half and press gently.
9. Heat a griddle or tava and apply a little butter. Place the dabeli on it and toast until it's golden brown on both sides.
10. Serve hot with additional chutney or sev, if desired.
