**Ingredients:**

- 2 cups of cooked white rice

- 2 cups of cooked black beans (or red beans)

- 1 cup of diced pork (you can use leftover cooked pork or cook it fresh)

- 1/2 cup of pico de gallo (a fresh salsa made with diced tomatoes, onions, cilantro, and lime juice)

- 1 cup of tortilla chips

- 2 tablespoons of vegetable oil

- Salt and pepper to taste

- Optional: hot sauce or Salsa Lizano for extra flavor


**Instructions:**


1. Start by cooking the rice and beans separately. You can use canned beans for convenience or cook dried beans according to package instructions. Make sure to drain and rinse the beans if you're using canned ones.


2. In a skillet, heat the vegetable oil over medium heat. Add the diced pork and sauté it until it's crispy and browned.


3. Remove the pork from the skillet and place it on paper towels to drain any excess oil.


4. In the same skillet, add the cooked rice and beans. Season them with salt and pepper, and cook for a few minutes to heat them through and combine the flavors.


5. Arrange the seasoned rice and beans on a serving plate or in individual bowls.


6. Sprinkle the crispy diced pork on top of the rice and beans.


7. Spoon the pico de gallo over the pork.


8. Place the tortilla chips around the edges of the plate or bowl.


9. Optionally, drizzle hot sauce or Salsa Lizano over the top for an extra kick of flavor.


10. Chifrijo is best enjoyed immediately while it's still warm.

Red alert of more heavy rains in Maharashtra, closures announced in schools, colleges in some districts

Heavy rains totally disrupts train services in Mumbai area, CM orders early closure of Govt Offices

  Due to heavy rains in Maharashtra, the speed of Mumbai local has slowed down.  Many trains have been cancelled and diverted. Due to heavy rains in Thane district adjacent to Mumbai, the track changing point on the Kalyan-Kasara route was damaged, due to which train services on this route were stopped on Wednesday afternoon.  A senior railway official gave this information.  The Central Railway also informed that it has diverted some mail and express trains on Diva-Panvel-Karjat route and Daund-Manmad route, besides terminating some trains between Mumbai and Pune.   Maharashtra Chief Minister Eknath Shinde on Wednesday ordered that the government offices in Mumbai and the neighboring region should be closed early.
