Cuisine : Sancocho - how to prepare this soup item
Sancocho is a delicious and hearty stew that is popular in many Latin American countries, with variations in each region. Here's a basic recipe for making a Colombian-style Sancocho:
Ingredients:
- 2 lbs of chicken (you can also use beef or a mix of meats)
- 1 large onion, chopped
- 3 cloves of garlic, minced
- 2 scallions, chopped
- 2 corn cobs, cut into rounds
- 2 plantains, peeled and cut into chunks
- 2 yuca roots, peeled and cut into chunks
- 2 potatoes, peeled and cut into chunks
- 2 carrots, peeled and cut into rounds
- 2 green plantains, peeled and cut into chunks (optional)
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 tomato, chopped
- 1 tablespoon of achiote or annatto powder (for color)
- Cilantro, chopped, for garnish
- Salt and pepper to taste
Instructions:
1. In a large pot, heat some oil over medium heat. Add the chopped onions, scallions, and garlic. Sauté until they are soft and fragrant.
2. Add the meat (chicken or beef) and brown it on all sides.
3. Stir in the achiote or annatto powder for color.
4. Add enough water to cover the meat, bring to a boil, and then reduce the heat to simmer. Cover and cook until the meat is tender, which may take an hour or more.
5. Once the meat is tender, add the corn, plantains, yuca, potatoes, carrots, and green plantains (if using). Continue to simmer until the vegetables are cooked and tender, which could take another 20-30 minutes.
6. Stir in the chopped bell peppers and tomato. Simmer for a few more minutes.
7. Season the Sancocho with salt and pepper to taste.
8. Serve hot, garnished with chopped cilantro.
Sancocho is typically served with rice and sometimes a side of avocado. Enjoy your homemade Sancocho!
