**Ingredients:**

- 2 cups of cooked white rice

- 2 cups of cooked black beans (or red beans)

- 1/2 cup of finely chopped bell peppers (red or green)

- 1/2 cup of finely chopped onions

- 2 cloves of garlic, minced

- 2 tablespoons of vegetable oil

- 1/2 teaspoon of ground cumin

- 1/2 teaspoon of ground black pepper

- 1/2 teaspoon of salt (adjust to taste)

- A handful of fresh cilantro, chopped (optional, for garnish)


**Instructions:**


1. Start by cooking the rice and beans separately. You can use canned beans for convenience or cook dried beans according to package instructions. Make sure to drain and rinse the beans if you're using canned ones.


2. In a large pan or skillet, heat the vegetable oil over medium heat.


3. Add the chopped onions, bell peppers, and minced garlic to the pan. Sauté them until they become tender and the onions turn translucent, typically for about 5-7 minutes.


4. Add the cooked beans to the pan along with the ground cumin, ground black pepper, and salt. Mix the ingredients well and cook for an additional 2-3 minutes.


5. Add the cooked rice to the pan, mixing it with the bean mixture. Continue to cook and stir for another 5-7 minutes until everything is well combined and heated through. The rice and beans should take on the traditional mottled appearance of Gallo Pinto.


6. Taste the Gallo Pinto and adjust the seasoning with more salt or spices if needed.


7. If desired, garnish with chopped fresh cilantro for extra flavor and color.


8. Serve your Gallo Pinto as a side dish, typically with eggs, cheese, fried plantains, and a side of Salsa Lizano (a popular Costa Rican condiment). It's a versatile dish and can be customized to your taste.
