Indian dish Chicken Rezala : How to prepare

 



Chicken Rezala is a delicious and aromatic Bengali dish that's made with tender pieces of chicken cooked in a creamy white sauce flavored with spices. Here's a basic recipe for preparing Chicken Rezala:

Ingredients:

For Marinating the Chicken:

  • 500 grams chicken, cut into pieces
  • 1/2 cup yogurt
  • 1 teaspoon ginger paste
  • 1 teaspoon garlic paste
  • Salt, to taste

For Rezala Paste:

  • 1/2 cup cashew nuts
  • 1/4 cup poppy seeds
  • 2 green chilies
  • 1 teaspoon white pepper powder
  • 1/2 teaspoon nutmeg powder
  • 1/2 teaspoon mace powder

For Cooking:

  • 2 tablespoons ghee (clarified butter)
  • 2 tablespoons vegetable oil
  • 2-3 bay leaves
  • 2-3 green cardamom pods
  • 2-3 cloves
  • 1-inch cinnamon stick
  • 1 large onion, finely chopped
  • Salt, to taste
  • 1 cup milk
  • 1/2 cup heavy cream
  • Chopped fresh coriander leaves, for garnishing

Instructions:

  1. Marinating the Chicken:

    • In a bowl, combine the chicken pieces with yogurt, ginger paste, garlic paste, and salt. Mix well to coat the chicken evenly. Let it marinate for at least 1 hour, or preferably overnight in the refrigerator.
  2. Making the Rezala Paste:

    • In a small bowl, soak the cashew nuts and poppy seeds in warm water for about 15-20 minutes.
    • Drain the water and blend the soaked cashews, poppy seeds, green chilies, white pepper powder, nutmeg powder, and mace powder into a smooth paste. Add a little water if needed.
  3. Cooking the Chicken Rezala:

    • In a large pan or pot, heat the ghee and vegetable oil over medium heat.
    • Add bay leaves, green cardamom pods, cloves, and cinnamon stick. Sauté for a minute until fragrant.
    • Add the chopped onion and sauté until it turns golden brown.
    • Add the marinated chicken and cook for a few minutes until the chicken changes color.
  4. Adding the Rezala Paste:

    • Lower the heat and add the prepared Rezala paste to the chicken. Mix well and cook for a couple of minutes, allowing the flavors to blend.
  5. Adding Milk and Cream:

    • Pour in the milk and bring the mixture to a simmer. Let it cook gently for about 10-15 minutes, stirring occasionally, until the chicken is cooked through and the flavors are well incorporated.
  6. Finishing Touches:

    • Stir in the heavy cream and cook for an additional 5 minutes. Adjust the salt if necessary.
  7. Serving:

    • Once the chicken is cooked and the sauce has thickened, remove from heat.
    • Garnish with chopped fresh coriander leaves.
  8. Serving Suggestion:

    • Chicken Rezala pairs well with naan, roti, paratha, or steamed rice.
