Bacalhau à Brás : how to make he Portuguese dish,

 





Preparing a Portuguese dish can be a delightful culinary experience. One popular and relatively easy dish to make is "Bacalhau à Brás," a Portuguese salted codfish dish. Here's a simplified recipe:


Ingredients:

- 400g of salted codfish (bacalhau), soaked and desalted

- 500g of potatoes, thinly sliced like matchsticks

- 1 large onion, finely chopped

- 3 cloves of garlic, minced

- 4 eggs

- 1/2 cup of chopped fresh parsley

- Olive oil

- Salt and pepper to taste


Instructions:


1. Start by desalting the codfish: Rinse it thoroughly under cold water, then soak it in a bowl of cold water for at least 24 hours, changing the water several times.


2. Once desalted, drain the codfish, remove any skin and bones, and shred it into small pieces.


3. Heat a generous amount of olive oil in a large skillet or frying pan over medium heat.


4. Add the thinly sliced potatoes to the skillet and fry until they are golden and crispy. Remove and set them aside on paper towels to drain excess oil.


5. In the same skillet, add more olive oil if needed and sauté the chopped onions and minced garlic until they become translucent.


6. Add the shredded codfish to the onions and garlic, cooking for a few minutes until the codfish is heated through.


7. Return the crispy potatoes to the skillet, mixing everything together.


8. In a separate bowl, beat the eggs and season them with salt, pepper, and chopped parsley.


9. Pour the beaten egg mixture over the codfish and potato mixture in the skillet. Stir gently to combine and cook until the eggs are just set.


10. Taste and adjust seasoning if necessary.


11. Serve your Bacalhau à Brás hot, garnished with more fresh parsley and a drizzle of olive oil if desired.
