Cooking : Phagshapa - How to prepare this Sikkimese cuisine

 



To prepare Phagshapa, a traditional Sikkimese pork and radish stew, you'll need the following ingredients:


Ingredients:

- 500g pork, thinly sliced

- 2 cups of radish, cut into thin strips

- 1 onion, finely chopped

- 2-3 cloves of garlic, minced

- 1-inch piece of ginger, minced

- 2-3 dried red chilies

- 1 tablespoon vegetable oil

- 1 teaspoon turmeric powder

- Salt to taste

- Water

- Chopped fresh coriander leaves for garnish


Instructions:


1. Heat the vegetable oil in a large pan or pot over medium heat.


2. Add the minced garlic, ginger, and chopped onion. Sauté until the onion becomes translucent.


3. Add the dried red chilies and sliced pork. Cook until the pork is lightly browned.


4. Stir in the turmeric powder and salt. Mix well to evenly coat the pork with the spices.


5. Add the radish strips to the pot and continue to sauté for a few more minutes.


6. Pour in enough water to cover the ingredients in the pot. Reduce the heat to low, cover the pot, and simmer for about 30-40 minutes or until the pork and radish are tender. You may need to add more water during cooking if it becomes too dry.


7. Taste and adjust the seasoning if needed, adding more salt or spice according to your preference.


8. Once the pork and radish are tender, remove the pot from heat.


9. Garnish with chopped fresh coriander leaves.


10. Phagshapa is typically served hot with rice or Tibetan bread.
