Gatte ki Sabzi - how to make this Rajasthani dish

 




Gatte ki Sabzi is a popular Rajasthani dish made with gram flour dumplings (gatte) cooked in a spiced yogurt-based gravy. Here's a step-by-step recipe to make it:


**Ingredients:**


**For Gatte (Dumplings):**

- 1 cup Gram Flour (Besan)

- 1/4 teaspoon Red Chili Powder

- 1/4 teaspoon Turmeric Powder

- 1/4 teaspoon Garam Masala

- 1/2 teaspoon Ajwain (Carom Seeds)

- 2 tablespoons Yogurt

- Salt to taste

- 2-3 tablespoons Oil

- Water, as needed


**For Gravy:**

- 2 cups Yogurt

- 1 tablespoon Gram Flour (Besan)

- 1/2 teaspoon Turmeric Powder

- 1 teaspoon Red Chili Powder

- 1 teaspoon Coriander Powder

- 1/2 teaspoon Garam Masala

- 1/2 teaspoon Cumin Seeds

- 2-3 tablespoons Oil

- 1/4 teaspoon Asafoetida (Hing)

- Salt to taste

- Fresh Coriander Leaves for garnish


**Instructions:**


**For Gatte (Dumplings):**

1. In a mixing bowl, combine gram flour, red chili powder, turmeric powder, garam masala, ajwain, salt, yogurt, and 2 tablespoons of oil.


2. Mix the ingredients and knead them into a stiff dough. Use a little water if needed. Make sure the dough is not too soft.


3. Divide the dough into small portions and roll them into cylindrical shapes, about 1/2 inch in diameter.


4. Bring a large pot of water to boil. Add the cylindrical dough pieces (gatte) and cook them until they float to the surface, which should take about 10-15 minutes.


5. Remove the cooked gatte from the water and let them cool. Then, cut them into small round pieces.


**For Gravy:**

6. In a bowl, whisk the yogurt and gram flour together until smooth. Ensure there are no lumps.


7. Heat oil in a pan or kadai. Add cumin seeds and asafoetida. Let them splutter.


8. Reduce the heat to low and add turmeric powder, red chili powder, and coriander powder. Quickly stir to avoid burning the spices.


9. Add the yogurt-gram flour mixture and stir continuously on low heat. Cook until the mixture thickens and oil starts to separate from the sides.


10. Add water to adjust the consistency of the gravy. It should be creamy and not too thick.


11. Add the cut gatte pieces to the gravy. Simmer for 10-15 minutes, stirring occasionally. Adjust salt and spices as needed.


12. Sprinkle garam masala and garnish with fresh coriander leaves.


Your Gatte ki Sabzi is ready to be served. It's typically enjoyed with roti or steamed rice. This dish has a delightful balance of flavors, with the spiced dumplings soaked in a creamy yogurt-based gravy.
