Dhokla the Gujarati Dish - tasty & spongy : How to make

 



Gujarati cuisine is known for its diverse and flavorful vegetarian dishes. One of the most popular and iconic Gujarati dishes is "Dhokla." Dhokla is a steamed, spongy cake or savory muffin made from fermented rice and chickpea flour. It's light, tangy, and often served as a snack or appetizer. Here's how to make it:

Ingredients:

For Dhokla:

  • 1 cup rice flour
  • 1/4 cup chickpea flour (besan)
  • 1/4 cup yogurt
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon ginger-green chili paste
  • Salt to taste
  • 1 teaspoon oil
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 8-10 curry leaves
  • 1/2 teaspoon asafoetida (hing)
  • 1 teaspoon sugar
  • 1 teaspoon fruit salt or baking soda
  • 2 tablespoons lemon juice
  • Chopped coriander leaves for garnish

For Tempering (Tadka):

  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • 2-3 green chilies, slit
  • A pinch of asafoetida (hing)
  • A few curry leaves
  • 2 tablespoons water

Instructions:

  1. In a mixing bowl, combine the rice flour, chickpea flour, yogurt, turmeric powder, ginger-green chili paste, salt, and sugar. Mix well.

  2. Add enough water to make a smooth, lump-free batter. The consistency should be similar to that of pancake batter.

  3. Grease a steaming tray or plate with oil.

  4. In a small bowl, mix the fruit salt or baking soda with lemon juice. It will foam up. Immediately add this to the batter and mix gently. The batter will become airy and light.

  5. Pour the batter into the greased tray and steam it for about 15-20 minutes or until a toothpick inserted into the center comes out clean.

  6. Remove the steamed dhokla from the tray and let it cool for a few minutes.

  7. Cut the dhokla into square or diamond-shaped pieces.

  8. Prepare the tempering (tadka) by heating oil in a small pan. Add mustard seeds, and when they crackle, add green chilies, asafoetida, and curry leaves. Add 2 tablespoons of water and let it simmer for a minute.

  9. Pour this tempering over the cut dhokla pieces.

  10. Garnish with chopped coriander leaves.

  11. Serve the dhokla warm with green chutney or tamarind chutney.

Dhokla is not only delicious but also healthy and easy to make. It's a staple in Gujarati cuisine and a favorite snack across India.
