Cooking :Swiss Dish Cordon Bleu - how to prepare

Cordon Bleu: A dish consisting of breaded and fried chicken or veal cutlets filled with ham and cheese, originally from Switzerland.

Here's a basic recipe for preparing Chicken Cordon Bleu:

**Ingredients:**

- 4 boneless, skinless chicken breasts

- 4 slices of ham

- 4 slices of Swiss cheese

- 1 cup all-purpose flour

- 2 large eggs

- 1 cup breadcrumbs (you can use plain or seasoned)

- Salt and pepper, to taste

- Cooking oil or butter, for frying

**Instructions:**

1. **Prepare the Chicken:**

   - Lay a chicken breast on a cutting board.

   - Carefully slice it horizontally, creating a pocket in the chicken breast, but be sure not to cut all the way through.

2. **Season and Fill:**

   - Season the inside of each chicken breast with salt and pepper.

   - Place a slice of ham and a slice of Swiss cheese inside each chicken breast pocket.

3. **Dredging:**

   - In three separate shallow dishes, place the flour in one, whisked eggs in another, and breadcrumbs in the third.

4. **Coat the Chicken:**

   - Take each chicken breast, dip it in the flour, ensuring it's coated evenly.

   - Then, dip it into the beaten eggs, allowing any excess to drip off.

   - Finally, coat it with breadcrumbs, pressing gently to adhere.

5. **Secure the Filling:**

   - Use toothpicks to secure the edges of the chicken, ensuring the ham and cheese stay inside.

6. **Heat Oil or Butter:**

   - Heat some oil or butter in a large skillet over medium-high heat.

7. **Cook the Chicken:**

   - Carefully place the chicken breasts in the hot skillet. Cook for about 5-7 minutes on each side, or until the chicken is cooked through and the crust is golden brown and crispy. The internal temperature should reach 165°F (74°C).

8. **Serve:**

   - Remove the toothpicks before serving to avoid any accidents.

   - You can serve Chicken Cordon Bleu with a sauce of your choice, like a creamy Dijon sauce or a simple mushroom sauce.

Enjoy your homemade Chicken Cordon Bleu!
