Preparation of Gujarati dish Golpapdi

 


Golpapdi, also known as Gur Papdi or Sukhdi, is a traditional Indian sweet made with whole wheat flour, jaggery (unrefined cane sugar), and ghee. Here's a simple recipe to prepare Golpapdi:


Ingredients:


- 1 cup whole wheat flour

- 1 cup jaggery (grated or chopped)

- 1/2 cup ghee (clarified butter)

- 1/4 cup chopped nuts (like almonds, cashews, or pistachios)

- 1/2 teaspoon cardamom powder

- A pinch of salt


Instructions:


1. Heat a heavy-bottomed pan or kadai on low-medium heat. Add the ghee and let it melt.


2. Add the whole wheat flour to the melted ghee. Mix well to combine and roast the flour in ghee. Keep stirring continuously to prevent burning and ensure even roasting. Roast until the flour turns a shade darker and emits a nutty aroma. This might take around 8-10 minutes.


3. Once the flour is roasted, add the chopped nuts and continue stirring for a couple of minutes until the nuts are lightly toasted.


4. Add the grated or chopped jaggery to the pan. Mix everything together and continue cooking on low heat.


5. The jaggery will start to melt and combine with the flour mixture. Keep stirring and cooking until the mixture thickens and leaves the sides of the pan. This usually takes around 5-7 minutes.


6. Add the cardamom powder and a pinch of salt. Mix well to incorporate the flavors.


7. Turn off the heat and immediately transfer the mixture to a greased plate or tray. You can use the back of a spatula or a flat-bottomed bowl to press and level the mixture evenly in the tray.


8. While the mixture is still warm, use a knife to cut it into square or diamond-shaped pieces.


9. Allow the Golpapdi to cool and set completely. Once cooled, carefully separate the individual pieces.


10. Your Golpapdi is ready to be enjoyed! Store it in an airtight container.
