Cuisine : Feijoada - How to make this traditional Brazilian dish

Feijoada is a traditional Brazilian dish, typically made with black beans, pork, and beef. Here's a simplified recipe:

Ingredients:

- 1 pound black beans (dry or canned)

- 1 pound pork shoulder, cut into chunks

- 1/2 pound smoked sausage, sliced

- 1/2 pound bacon, chopped

- 1/2 pound pork ribs

- 1/2 pound beef chunks

- 1 onion, finely chopped

- 4 cloves garlic, minced

- 2 bay leaves

- Salt and pepper to taste

Instructions:

1. If using dry black beans, soak them overnight. Rinse them before cooking.

2. In a large pot, combine the black beans with enough water to cover them. Add the pork shoulder, smoked sausage, bacon, pork ribs, and beef chunks.

3. Add the chopped onion, minced garlic, bay leaves, salt, and pepper to the pot.

4. Bring the mixture to a boil, then reduce the heat to low and simmer for about 2-3 hours or until the beans are tender and the meats are cooked through.

5. Occasionally skim off any foam that rises to the surface.

6. Adjust the seasoning as needed and continue simmering until the flavors meld together.

7. Serve the feijoada over rice, traditionally accompanied by orange slices and collard greens.

Note: There are regional variations of feijoada, so ingredients and preparation methods may vary. Adjustments can be made based on personal preferences.
