The banana leaf helps to infuse the fish with aromatic flavors during the cooking process. Here's a simple recipe for preparing Bhetki maacher pathuri:
Ingredients:
- 4 Bhetki (Barramundi) fish fillets
- 1 tablespoon mustard oil (or any cooking oil of your choice)
- 1 tablespoon mustard paste
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 tablespoon yogurt (optional)
- Salt, to taste
- Banana leaves (large enough to wrap each fish fillet)
Instructions:
Clean the fish fillets and pat them dry with paper towels.
In a mixing bowl, prepare the marinade by combining mustard oil, mustard paste, turmeric powder, red chili powder, cumin powder, coriander powder, yogurt (if using), and salt. Mix everything well to form a smooth marinade.
Rub the marinade evenly onto each fish fillet, making sure they are coated well on all sides. You can let the fish marinate in the fridge for about 30 minutes to an hour for better flavor absorption.

b. Pan-frying: Heat a non-stick pan over medium heat and add a little oil. Place the wrapped fish parcels in the pan and cook for about 5-7 minutes on each side until the fish is fully cooked and the banana leaves become slightly charred.
