Cuisine : Bhetki maacher Pathuri - how to prepare this Bengali dish


"Bhetki maacher pathuri" is a popular Bengali dish that consists of fish fillets, especially from the Bhetki (Barramundi) fish, marinated in spices and then wrapped in banana leaves before cooking. The banana leaf helps to infuse the fish with aromatic flavors during the cooking process. Here's a simple recipe for preparing Bhetki maacher pathuri:

Ingredients:

  • 4 Bhetki (Barramundi) fish fillets
  • 1 tablespoon mustard oil (or any cooking oil of your choice)
  • 1 tablespoon mustard paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 tablespoon yogurt (optional)
  • Salt, to taste
  • Banana leaves (large enough to wrap each fish fillet)

Instructions:

  1. Clean the fish fillets and pat them dry with paper towels.


  2. In a mixing bowl, prepare the marinade by combining mustard oil, mustard paste, turmeric powder, red chili powder, cumin powder, coriander powder, yogurt (if using), and salt. Mix everything well to form a smooth marinade.


  3. Rub the marinade evenly onto each fish fillet, making sure they are coated well on all sides. You can let the fish marinate in the fridge for about 30 minutes to an hour for better flavor absorption.


  4. While the fish is marinating, prepare the banana leaves. Cut them into square or rectangular pieces large enough to wrap each fish fillet fully.


  5. Gently heat the banana leaves over an open flame for a few seconds on each side. This process helps to soften the leaves and prevents them from breaking while wrapping.

  6. Take one piece of banana leaf and place a marinated fish fillet in the center. Fold the leaf over the fish, creating a neat and secure parcel. You can use toothpicks or kitchen twine to secure the parcel if needed.


  7. Repeat the process for all the fish fillets, creating individual parcels.


  8. Now, you have two options for cooking the Bhetki maacher pathuri:

    a. Steaming: Place the wrapped fish parcels in a steamer and steam for about 15-20 minutes until the fish is cooked through.

    b. Pan-frying: Heat a non-stick pan over medium heat and add a little oil. Place the wrapped fish parcels in the pan and cook for about 5-7 minutes on each side until the fish is fully cooked and the banana leaves become slightly charred.


  9. Once cooked, carefully unwrap the banana leaves and serve the Bhetki maacher pathuri hot with steamed rice or your favorite side dishes.
