Tteokbokki is a beloved Korean street food made from chewy rice cakes (tteok) cooked in a spicy and sweet gochujang-based sauce. Here’s a simple recipe to make Tteokbokki at home:
Ingredients:
- **Rice Cakes:** 1 lb (450g) cylindrical Korean rice cakes (tteok)
- **Fish Cakes:** 3-4 sheets of Korean fish cake (eomuk), cut into bite-sized pieces
- **Vegetables:**
- 1 medium onion, sliced
- 2 green onions, cut into 2-inch pieces
- 1-2 carrots, julienned (optional)
- 1/2 cup cabbage, chopped (optional)
- **Broth:**
- 4 cups of water or anchovy broth
- **Sauce:**
- 3 tablespoons gochujang (Korean red chili paste)
- 1 tablespoon gochugaru (Korean red chili flakes) (optional, for extra heat)
- 2 tablespoons soy sauce
- 1 tablespoon sugar
- 1 tablespoon corn syrup or honey
- 2 cloves garlic, minced
Instructions:
1. **Prepare the Rice Cakes:**
- If the rice cakes are hard or frozen, soak them in warm water for about 10-20 minutes to soften.
2. **Make the Broth:**
- In a large pan or pot, bring 4 cups of water or anchovy broth to a boil. If making anchovy broth, you can simmer dried anchovies and kelp in water for about 10 minutes, then strain.
3. **Prepare the Sauce:**
- In a small bowl, mix together the gochujang, gochugaru (if using), soy sauce, sugar, corn syrup (or honey), and minced garlic.
4. **Cook the Tteokbokki:**
- Add the prepared sauce to the boiling broth, stirring well to dissolve.
- Add the rice cakes, fish cakes, onion, and any optional vegetables like carrots and cabbage.
- Stir to combine and bring to a boil. Reduce the heat to medium and simmer for about 10-15 minutes, or until the rice cakes are soft and the sauce has thickened. Stir occasionally to prevent sticking.
5. **Finish and Serve:**
- Add the green onions during the last 2-3 minutes of cooking.
- Taste and adjust seasoning with more soy sauce or sugar if needed.
- Serve hot, garnished with additional green onions or sesame seeds if desired.

- For a milder version, reduce the amount of gochujang and omit the gochugaru.
- You can add boiled eggs or ramen noodles to the dish for extra protein and texture.
- If you like cheese, adding a slice of mozzarella cheese on top of the hot tteokbokki and letting it melt can be a delicious variation.
