"Mok Pa" is a traditional Cambodian dish consisting of steamed fish wrapped in banana leaves with aromatic herbs and spices. Here's a detailed preparation:


Ingredients:

- Fish fillets (traditionally river fish like tilapia or catfish are used)

- Banana leaves (for wrapping)

- Aromatics: lemongrass, galangal, garlic, shallots

- Fresh herbs: kaffir lime leaves, cilantro, basil

- Seasonings: fish sauce, lime juice, salt, sugar

- Optional: chili peppers for heat


Preparation:

1. **Prepare the Fish**: Clean the fish fillets and cut them into portions suitable for wrapping. Pat them dry with paper towels and season lightly with salt.


2. **Aromatics and Herbs**: Finely chop lemongrass, galangal, garlic, and shallots. Tear or chiffonade the kaffir lime leaves, cilantro, and basil.


3. **Marinade**: In a bowl, mix together the chopped aromatics and herbs with fish sauce, lime juice, a pinch of sugar, and optionally chopped chili peppers for heat. Adjust the seasoning to taste.


4. **Wrap in Banana Leaves**: Cut banana leaves into large squares. Place a portion of the fish fillet on each piece of banana leaf. Spoon the marinade mixture generously over the fish fillets.


5. **Fold and Secure**: Fold the banana leaves over the fish to enclose them completely, creating a packet. Secure the packets with toothpicks or kitchen twine to prevent them from opening during steaming.


6. **Steam**: Arrange the wrapped fish packets in a steamer basket or on a rack over boiling water. Steam the fish for about 20-25 minutes, or until the fish is cooked through and flaky.


7. **Serve**: Carefully open the banana leaf packets and transfer the steamed fish onto serving plates. Garnish with additional fresh herbs and a wedge of lime for squeezing.


8. **Enjoy**: Serve the Mok Pa hot as a main dish, accompanied by steamed rice and perhaps some fresh vegetables or a dipping sauce on the side.


Mok Pa is not only delicious but also a healthy and aromatic way to enjoy fresh fish, showcasing the vibrant flavors of Cambodian cuisine.
