Cuisine : Char Kway Teow - How to prepare this Singaporean tasty item

 



 Char Kway Teow is a popular Malaysian and Singaporean dish made with flat rice noodles stir-fried with shrimp, cockles, eggs, Chinese lap cheong (sausage), bean sprouts, and chives in a mix of soy sauce. Here's a detailed recipe:


Ingredients:

- 400g fresh flat rice noodles

- 200g shrimp, peeled and deveined

- 100g cockles (optional)

- 2 Chinese lap cheong sausages, sliced thinly

- 3 cloves garlic, minced

- 2 eggs, beaten

- 2 cups bean sprouts

- 2 stalks Chinese chives, cut into 2-inch lengths

- 3 tablespoons soy sauce

- 1 tablespoon dark soy sauce

- 1 tablespoon fish sauce

- 1 tablespoon oyster sauce

- 1 tablespoon chili paste (optional)

- Vegetable oil for frying

- Salt and pepper to taste


Instructions:

1. Soak the rice noodles in warm water for about 20 minutes until they are soft. Drain and set aside.

2. In a small bowl, mix together the soy sauce, dark soy sauce, fish sauce, and oyster sauce. Set aside.

3. Heat a large wok or frying pan over high heat. Add a tablespoon of oil and swirl to coat the pan.

4. Add the minced garlic and stir-fry until fragrant, about 30 seconds.

5. Add the shrimp and stir-fry until they turn pink and are cooked through. Remove and set aside.

6. In the same wok, add a little more oil if needed. Add the lap cheong sausage slices and stir-fry until they start to brown.

7. Push the lap cheong to one side of the wok and pour the beaten eggs into the other side. Scramble the eggs until they are cooked through.

8. Add the drained rice noodles to the wok and toss with the lap cheong, eggs, and garlic.

9. Pour the sauce mixture over the noodles and toss to coat evenly. If using chili paste, add it now and toss to combine.

10. Add the cooked shrimp, cockles (if using), bean sprouts, and Chinese chives to the wok. Stir-fry everything together for another 2-3 minutes until heated through.

11. Taste and adjust seasoning with salt and pepper if needed.

12. Serve hot, garnished with extra bean sprouts and Chinese chives if desired.
