Cuisine : Soto - How to prepare this soup of Indonesia

Soto is a traditional Indonesian soup that's flavorful and aromatic. Here's a detailed recipe to prepare it:

Ingredients:

- 1 whole chicken, cut into pieces

- 2 liters water

- 2 stalks lemongrass, smashed

- 3 kaffir lime leaves

- 2 bay leaves

- 2 inches galangal, sliced

- 4 cloves garlic, minced

- 4 shallots, minced

- 2 teaspoons ground turmeric

- 1 teaspoon ground coriander

- 1 teaspoon ground cumin

- 1 teaspoon ground white pepper

- 2 teaspoons salt, or to taste

- 2 tablespoons vegetable oil

- 200 grams vermicelli noodles, cooked according to package instructions

- Hard-boiled eggs, sliced

- Bean sprouts

- Cabbage, thinly sliced

- Fried shallots, for garnish

- Lime wedges, for serving

- Fresh cilantro leaves, for garnish

- Sweet soy sauce, for serving

Instructions:

1. In a large pot, bring water to a boil. Add the chicken pieces, lemongrass, kaffir lime leaves, bay leaves, and galangal. Reduce the heat to low and simmer for about 30-40 minutes, or until the chicken is cooked through and tender. Skim off any foam that rises to the surface.

2. While the chicken is simmering, prepare the spice paste. In a mortar and pestle or food processor, grind together the minced garlic, minced shallots, ground turmeric, ground coriander, ground cumin, and ground white pepper to form a smooth paste.

3. Heat vegetable oil in a skillet over medium heat. Add the spice paste and sauté until fragrant, about 3-4 minutes.

4. Add the sautéed spice paste to the pot of simmering chicken. Stir to combine and let it simmer for another 10-15 minutes to allow the flavors to meld.

5. Season the soup with salt, adjusting to taste.

6. To serve, place a portion of cooked vermicelli noodles in a bowl. Top with pieces of chicken, sliced hard-boiled eggs, bean sprouts, and thinly sliced cabbage.

7. Ladle the hot soup over the noodles and toppings.

8. Garnish with fried shallots, fresh cilantro leaves, and serve with lime wedges and sweet soy sauce on the side.

9. Enjoy your comforting bowl of Soto!

Feel free to adjust the ingredients and seasoning according to your taste preferences.
