Ingredients:
- 1 whole chicken, cut into pieces
- 2 liters water
- 2 stalks lemongrass, smashed
- 3 kaffir lime leaves
- 2 bay leaves
- 2 inches galangal, sliced
- 4 cloves garlic, minced
- 4 shallots, minced
- 2 teaspoons ground turmeric
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon ground white pepper
- 2 teaspoons salt, or to taste
- 2 tablespoons vegetable oil
- 200 grams vermicelli noodles, cooked according to package instructions
- Hard-boiled eggs, sliced
- Bean sprouts
- Cabbage, thinly sliced
- Fried shallots, for garnish
- Lime wedges, for serving
- Fresh cilantro leaves, for garnish
- Sweet soy sauce, for serving
Instructions:
1. In a large pot, bring water to a boil. Add the chicken pieces, lemongrass, kaffir lime leaves, bay leaves, and galangal. Reduce the heat to low and simmer for about 30-40 minutes, or until the chicken is cooked through and tender. Skim off any foam that rises to the surface.
2. While the chicken is simmering, prepare the spice paste. In a mortar and pestle or food processor, grind together the minced garlic, minced shallots, ground turmeric, ground coriander, ground cumin, and ground white pepper to form a smooth paste.
