Cuisine : Kare-Kare : Steps to prepare this traditional Filipino cuisine

 




Kare-Kare is a traditional Filipino dish known for its rich and savory peanut sauce. It's often made with oxtail, tripe, and vegetables. Here's a basic recipe:


Ingredients:

- 1 kg oxtail, cut into 2-inch pieces

- 1/2 kg beef tripe, cleaned and cut into bite-sized pieces (optional)

- 1 tablespoon annatto seeds (achuete)

- 2 tablespoons cooking oil

- 1 medium-sized onion, chopped

- 4 cloves garlic, minced

- 2 tablespoons peanut butter

- 1/4 cup ground toasted rice

- 6 cups beef broth or water

- 2 eggplants, sliced

- 1 bundle string beans (sitaw), cut into 2-inch lengths

- 1 banana blossom (puso ng saging), sliced (optional)

- Salt and pepper to taste

- Bagoong (fermented shrimp paste) for serving


Instructions:

1. In a pot, boil the oxtail and beef tripe (if using) in water for about 1 to 1.5 hours or until tender. Remove any scum that rises to the surface. Reserve the broth and set aside.


2. In a separate pan, heat the cooking oil over medium heat. Add the annatto seeds and cook until the oil turns red. Remove the seeds and discard them.


3. Sauté the chopped onion and minced garlic in the annatto oil until fragrant and translucent.


4. Add the peanut butter and ground toasted rice. Cook for a few minutes, stirring constantly to prevent burning.


5. Pour in the reserved beef broth or water, around 6 cups. Bring to a boil, then reduce heat and simmer for about 10 minutes, stirring occasionally.


6. Add the boiled oxtail and beef tripe back into the pot. Simmer for another 10 minutes to allow the flavors to meld together.


7. Add the sliced eggplants, string beans, and banana blossom (if using). Simmer until the vegetables are tender, about 5-7 minutes.


8. Season with salt and pepper to taste.


9. Serve hot with steamed rice and bagoong on the side. Enjoy your delicious Kare-Kare!


Feel free to adjust the ingredients and quantities according to your preference. Some variations include adding ground peanuts or using other meats like pork or chicken.
