Kolo Mee is a popular noodle dish from Sarawak, Malaysia. Here's a basic recipe:
Ingredients:
- Fresh egg noodles
- Char siu (Chinese barbecued pork), thinly sliced
- Spring onions, thinly sliced
- Shallots, thinly sliced and fried until crispy
- Garlic, minced and fried until crispy
- Vegetable oil
- Soy sauce
- Oyster sauce
- White pepper
- Salt
- Sugar
Instructions:
1. Cook the fresh egg noodles according to package instructions. Drain and set aside.
2. In a wok or large frying pan, heat some vegetable oil over medium heat.
3. Add the minced garlic and fry until golden and crispy. Remove from the oil and set aside.
4. In the same oil, fry the thinly sliced shallots until golden and crispy. Remove from the oil and set aside.
5. In the same oil, stir-fry the char siu slices until heated through.
6. Add the cooked noodles to the wok or pan and toss to combine with the char siu.
7. Season the noodles with soy sauce, oyster sauce, white pepper, salt, and sugar to taste. Adjust the seasoning according to your preference.
8. Add the sliced spring onions and toss everything together until well combined and heated through.
9. Serve the Kolo Mee hot, garnished with the crispy garlic and shallots on top.
